Part two of the Node. The blast chiller -- a fridge-sized box on a standard outlet, reverse-engineered from MGM Grand's enterprise food-rescue program -- takes prepared food from serving temperature to safe transport temperature inside the code window, breaking the 'eat it now or bin it' constraint. It sits in the half of a cafe kitchen that was never being used. Under a Food Rescue Operating System the recovered space retools toward preservation (blast chillers, freeze dryer, dehydrator), customizable to the neighborhood's volume; the front of house can be as light as a potato-and-soup bar (the Edge Runner hack: match the regulatory load to the ambition).
